Some with foam, some not so much - I haven’t fished that hatch in years anyway

You need a subsurface pattern to represent the pupa. When these flies hatch, the pupas craw out of the water and change into the adults out of the reach of the trout. If you have had success with dry flies, it was because females had returned to the water to lay eggs or your fly was just working as an attractor pattern.
